Despite looming clouds and chances of showers I had a pretty productive Sunday morning. The day's first victory came at 8am when we woke up and actually remembered daylight savings --- definitely a first for me. I then happened to check the blog and see Kate's amazing reminder of the GO International sale at Target and managed to buy two dresses right away (these babies sell out fast!) for a total of $70. So far, pretty productive! Around 10:30am Nic left me for Davis, CA to celebrate "National Corndog Day" (seriously) at a friend's PBR sponsored party. Still full off of last night's late night trip to our neighborhood crepe truck (DANGER), I decided to stay home and get a little exercise instead. Feeling shameless, I dug into my closet and resurrected my Roller Blades, bought circa 1996 and last worn in 2003.
I had three goals; get exercise, overcome my fear of people seeing me rollerblading and go buy new jeans. So, backpack packed, "Spiritblades" strapped on, I embarked on a several mile endeavor to my nearest Lucky Jeans store. Despite some barks from dogs, amused looks from passerby-ers and a few bumps on some gravel I made it to Union Square unscathed, changed out of the blades into my sneakers and emerged triumphant from Lucky Brand with a new pair of "Sweet n Lows". On the way home I started to get pretty hungry and stopped off at Trader Joe's to pick up some groceries. Knowing that we had a bottle of "Frank's Red Hot" at home and that I've had buffalo chicken on the brain, I decided to put together a totally healthy version of a Buffalo Chicken Salad - complete with spicy chicken, blue cheese and ranch dressing. It took 15 minutes to make and it was AMAZING!!! All without the usual fat and calories. Here's the simple recipe...
Healthy and Light Buffalo Chicken Salad
-1 large skinless chicken breast - cut up into tender sized pieces
-1/4 cup "Batter Blaster" batter - this is organic pancake batter in a can and it is amazing! If you don't want to use this, just use 2 tablespoons of whole wheat flour.
-3 cups chopped romaine lettuce
-1 handful snow peas - chopped in half
-2 wedges "Laughing Cow" light blue cheese
Dressing Ingredients (just mix the below together)
-1/4 cup fat free plain yogurt
-1/2 packet ranch dressing or dip powder
-1 tablespoon water
-Put a non-stick frying pan over high heat and spray with Pam.
- Season the chicken strips in salt and pepper on both sides and then coat in either the Batter Blaster or the whole wheat flour. Drop on Pan.
-Cook the chicken for 3-4 minutes and then flip it to the other side - cook for a few more minutes until cooked through.
- Put 3 tablespoons of "Frank's Red Hot" in a bowl.
-When chicken is cooked through, toss it in the bowl of Red Hot to coat it and then throw it on the salad.
- Add dressing and toss
