Yummy Peanut Butter Cookies for Lazy Bakers
Lately I have been wanting to bake more so I figured I should master the peanut butter cookie. Unfortunately baking has always been a challenge since both Nic and I are big time lactards. Usually I use goat butter as a lactose-free substitute but it is so expensive and hard to find that I have skeptically been searching for butter free cookie recipes. I found this incredibly simple recipe from one of my new favorite blogs, peanutbutterfingers. This recipe is so easy, with such common ingredients and short bake time that you could be at a friend's house and your friend could be like,
"Oh man, I wish I had a cookie." To which you'd reply,
"Give me 15 minutes." Then you'd go into their kitchen and 15 minutes later come out with a hot plate of fresh baked peanut butter cookies. Bad ass, no?
In addition to being fast and easy --- these cookies are DELICIOUS!!! Nic was extremely skeptical of cookies made without flour but as soon as they were done he immediately popped 1 into his mouth and announced that he would not be bringing them to his grad school study group (as was the original plan)... he had to keep the rest for himself! Here is the recipe --- so simple I already know it by heart...
EASY PEASY PEANUT BUTTER COOKIES

1 cup peanut butter
1 cup sugar
-Preheat oven to 350
-Mix 3 ingredients together in a large bowl
-Spray baking sheet with Pam and spoon out balls of the batter onto the tray, pressing down with a fork to make them flatter. (They don't grow too much in the baking process so you can put them pretty close together.) I made ours small, about 1 1/2 inches in diameter before baking.
-Bake for about 12 minutes (until cooked through)
Serve and watch them disappear!!!!
