Hawaiian Style Chicken Burgers

When people talk about Hawaii they'll tell you all about the beautiful beaches, the amazing surfing, the laid back lifestyle and while it's all true and totally amazing I want to talk about the food! Hawaii has great food! Last summer I went there for the first time on my honeymoon and Nic and I totally fell in love... with the food! We spent 10 days on the north shore of Oahu and had some of the most delicious lunches for under $10 from the food trucks that lined the beaches. We ate thai, fresh seafood and lots of delicious local faves out of to-go containers as we sat on towels watching the waves. For two glorious unemployed weeks we were living the dream. 'Sigh'

Sadly we won't be heading back to Hawaii anytime soon but I WILL pay homage to the sweet and tangy cuisine with my Hawaiian style chicken burger! Fresh and simple, this little twist to my usual healthy burger brings a little bit of brightness to our kitchen on a foggy San Francisco Tuesday night :)

Hawaiian Style Chicken Burger
1 lb ground chicken
2/3 cup finely chopped onion
2 tablespoons finely chopped scallions
2 tablespoons teriyaki sauce
1 1/2 tsp low sodium soy sauce

For topping
More teriyaki sauce
Sliced or chopped pineapple (or canned pineapple rings)

-Mix all burger ingredients together in a bowl with your hands
-Form four burger patties
-Spray a frying pan or grill with Pam and cook burgers until cooked through
-While burgers are cooking spray another pan with Pam or the side of your burger pan to cook the pineapple... cook for a few minutes on each side or until lightly browned on each side.

- Top the burger with cooked pineapple, teriyaki sauce and ENJOY!!!
