Lazy Girl Pizza


The other night after a particularly grueling bootcamp class I was dreaming of the delicious thin crust pizza from my favorite restaurant, Starbelly. I had been planning to cook some turkey sausage I had thawed out the night before and there was no pizza dough in site but I had pizza on the brain! After scouring the fridge I managed to come up with a few potential pizza enablers: Laughing cow light garlic cheese wedges, some parmesan cheese and flour tortillas. After preparing the sausage the way I had originally planned I used the spare ingredients to make a makeshift pizza and the result was totally satisfying. The tortilla crisped up perfectly in the oven and the laughing cow/parmesan combo was a perfect cheesey blend for my awesome lazy girl pizza. It was good enough to share with you all and healthy enough that it was the perfect post workout dish!

Here's the recipe in all it's makeshift goodness...

Lazy Girl Sausage Pizza - Makes 2 pizzas
Ingredients:
-2 Eight inch flour tortillas
-4 Laughing Cow Garlic light cheese wedge
-3 Jenny O' Lean turkey sausage
-1 chopped red bell pepper
-1 1/2 cup chopped onion
-1 large (30 ounce) can diced tomatoes
-1 tablespoon italian seasoning
-Lots of salt and pepper to taste
-2 cloves garlic
-2 pinches red pepper flakes

Directions:
-Preheat oven to 450 degrees
-Put a large pan over medium high heat and spray with Pam
-Pour a couple spoonfuls of water into the pan
-Put sausages into the pan and cook until water evaporates - turning to brown all sides.
-Add chopped onion, peppers, garlic and a few sprinkles of salt to the pan
-Saute 5 minutes until peppers and onions are starting to soften.
-Add can of diced tomatoes, italian seasoning, red pepper flake and a few more sprinkles of salt and pepper.
-Stir and saute for about 5 minutes.
-At this point the sausages should be almost cooked through, use a fork and sharp knife to slice the sausages in the pan.
-Let the mixture cook for a few more minutes until peppers and onions are soft, sausage is cooked and the sauce is flavorful from the seasonings.
-Spread 2 wedges of laughing cow cheese on each tortilla and place on a baking sheet in the oven.
-Cook 1-3 minutes or until edges of the tortilla are turning golden and it is nice and crisp.
-Carefully take your tortillas out of the oven and top with a nice even layer of the sausage mixture.
-Sprinkle 1 tablespoon of parmesan cheese over each tortilla
-Cut into pieces with an knife and fork and eat like a pizza (with a few napkins).
DELICIOSO!
