Healthy Peanut Butter and Banana Pancakes


I'm really into pancakes these days. Ever since I found this cottage cheese pancake recipe and realized pancakes could be ridiculously easy and healthy, I've been making them almost every weekend and even the occasional weekday morning, like this morning.
I keep forgetting to buy cottage cheese and I want to keep these nice and light so I've started to play around with simple variations to make an oat-y pancake that goes well with whatever fruit we have on hand. Recently I decided to put a bit of peanut butter in the mix and had myself a delightful little peanut butter banana and blueberry breakfast.

Here's the simple and healthy recipe to try yourself!

Oat-tastic Peanut Butter + Banana Pancakes with Sauteed Blueberries
-Makes 1 big pancake
Ingredients For Pancake:
-1/3 cup oats
-2 1/2 tablespoons skim milk or any milk substitute (I actually used vanilla almond milk)
-1 tsp natural peanut butter
-1 egg white
-1/2 banana sliced

Topping Ingredients:
-1/2 banana sliced
-1/2 cup fresh blueberries

Directions:
-Mix all pancake ingredients in the blender until liquidy and the oats are small flecks
-Put a pan over medium high heat and spray with Pam
-Pour the contents of the blender into the pan. It should make 1 big pancake.
-Place the banana slices in the pancake. Like this...

-Put a separate pan (or the same pan once the pancake is done) over medium heat and spray with Pam. Put in the blueberries and leftover banana slices (whatever didn't fit in the pancake) and saute until the berries are liquidy and the banana slices are golden and mushy.

-Put the pancake on a plate and top with the berry/banana mix. Enjoy!
