Simple Summer Dinner and Easy Tomato Salad
Happy Monday friends! It is a happy Monday for me since I am on vacation till about noon when we hit the road back to San Francisco. Wish we could stay another week! It was a beautiful weekend down in SoCal and while we were mostly relaxing and hanging out outside I did do a little cooking at my aunt and uncle's house where we were vacationing/dog-sitting. They also have a slow cooker so I made my shredded bbq chicken and served it with lots of yummy local produce for a summertime feast. I boiled up some fresh corn on the cob and made a yummy tomato and goat feta salad to go with it. It was my ideal summertime meal: simple, tasty and all about the fresh produce.
Here's the super simple but tasty salad recipe for the next time you barbecue or need a simple side to bring to a summer meal!
Fresh Tomato Salad - This is delicious IF you have fresh produce to make it with. Do not try in the winter!
-Makes about 3-4 big servings or 5-6 smaller ones.
1/3 cup chopped feta - it should be hard and crumbly
4 fresh tomatoes (sliced and then cut in half) or 3 big ones (go organic with tomatoes!)
1/3 purple onion - sliced very thinly
1 large cucumber - peeled and sliced and then cut in half
1/2 cup chopped fresh basil
3 spoonfuls olive oil
3 1 spoonfuls balsamic vinegar
Mix all the veggies and cheese well in a big bowl.
Add the olive oil, vinegar and then sprinkle on a little salt and pepper.
Toss and Serve!
