What to do with a Pound of Broccoli? Wrap it in Pizza Dough!

I love vegetables. I could usually eat endless amounts of all things green but when I'm cooking for others or feeling vegged-out I have just the trick for veggie woes: pre-made pizza dough! Trader Joe's pre-made pizza dough is a total game changer. For $1.29 it can transform any hodge-podge of leftovers into pure joy --- a hot pocket of deliciousness.

For about 10 days we had about a pound of broccoli from our last farm fresh delivery taking up space in the fridge and I really didn't feel like eating broccoli. Last week I finally googled "tastiest way to cook broccoli" and came up with a bunch of references to Ina Garten's roasted broccoli. I made a simplified version of this recipe in the morning before work with just garlic and olive oil and it came out great. I stuck it in the fridge and then threw marinara sauce, chicken breast and seasoning in the slowcooker and let it go all day while I was at the office. When I got home from work I added in the broccoli to chicken (now tender and shreddible) to heat it up. I ate this savory blend in a bowl with a little melted cheese and it was amazing.

For Nic I really amped it up and brought out the pre-made pizza dough. I wrapped a big scoop of the broccoli/chicken/sauce mixture in a piece of pizza dough, sprinkled on a little cheese and baked it up for 10 minutes...instant happiness. We both loved it. It tasted great and the leftover "hot pockets" can be frozen and re-heated up to a week later. I LOVE pre-made Pizza dough :)

Here's this simple recipe but I know from experience that any meet+veggie/sauce/cheeese mixture wrapped in dough will taste awesome...

Roasted Broccoli and Chicken Hot Pockets - One bag of dough makes 4 big servings
-Put chicken in slowcooker, Make roasted broccoli, combine and bake in the pizza dough.

Total Ingredients:
2 heads of Broccoli- chop off into small florets
2 chicken breasts cut into big chunks
1 1/2 cups of marinara sauce
1/2 chopped onion
1/2 bag (2 big servings) pre-made pizza dough
1 half slice yogurt or mozzerella cheese per calzone
red pepper flakes
Salt and pepper
1 tsp oregano

Step 1: Chicken in Sauce
-Season chicken with salt and pepper and put in the slow cooker with the chopped onions.
-Top with the marinara sauce and set the cooker to low and time to 6 hours. You could also do high for 4. (You could also do this in a regular pot on the stove --- you'll just have to watch it!)

Step 2: Roasting the Broccoli (This would be a great side dish on it's own.)
-Preheat oven to 425 degrees
-Cut broccoli tops off and put on a large baking sheet sprayed with Pam
-Sprinkle with 2 tablespoons olive oil and season with lots of salt and a little pepper
-Sprinkle the chopped garlic on the pan
-Sprinkle a little red pepper flakes on the pan
-Bake for 20 minutes
-Add broccoli to chicken with marinara sauce.

Assembling the Calzone - set oven to 375 degrees
-Cut a bag of premade pizza dough into four pieces and roll out with a rolling pin (cover the pin and the countertop with flour to prevent sticking.)
-Scoop some chicken-broccoli with sauce onto the piece of dough and top with a slice of cheese, fold over the dough and crimp edges.
-Bake for 12 minutes or until dough is cooked.

Cut open and enjoy!
