Mondays are Terrible + 5 Ingredient No Work Dinner
Hi people anndddd... happy monday! One down and four more to go :)
Sorry for the lack of posts these past few days but I've been a busy lady. Nic and I had a glorious but short-lived 60 hour getaway to the North Shore of Massachusetts where we spent time with family, hung by a pool, ran 10 miles in the sticky heat, domed ourselves on the world's best fried scallops and then reluctantly got back on a plane back to reality. Don't get me wrong, I am loving myself the California life but there is something about New England in the summer that feels like home. It was a great getaway but there's nothing like an abbreviated vacation and heading back to work to bring on the Sunday blues. If it weren't for Jet Blue's in flight direct tv and 6 hours of quality "Shark Week" programming on the discovery channel I would have been in a rough place on Sunday night.
This week and next are crazy busy at work so wish me luck and hopefully I'll get to leave the office early enough on a few to do some cooking, blogging and get my butt to a bootcamp class on time. In the mean time here's a really easy 5 ingredient recipe that tastes super awesome and works perfectly when you are swamped with work and have no time.
Slow Cooker Chicken Tacos
Ingredients - makes about 6 small tacos
-2 large chicken breasts (or 4 thighs) without bones or skin (do not season with salt - the taco seasoning is salty enough!)
-1 1/2 cups medium salsa
-1/2 packet taco seasoning
-1/2 onion chopped
-Small Flour or Corn Tortillas
-Throw everything except the tortillas in the slow cooker and let cook for 4-5 hours on low.
-When you're ready to eat, shred the chicken apart with two forks and scoop some chicken and sauce into a warmed tortilla.
(You can make this without a slow cooker in about 2 hours but you'll just have to watch the pot.)
