Weekend Breakfast with the Fam: Turkey Bacon and Avocado Scramble

I love a homemade breakfast on the weekends. Some of my earliest food memories are from Saturday or Sunday mornings when I woke up to the scent of my mom's homemade scones and muffins or my dad's "breakfast" hamburgers and BLTs. There's just something vacation-y about spending a weekend morning sitting around the table with food, coffee and nowhere else to be. This past weekend my mom was staying in our apartment for the first time so I wanted to make a big Saturday breakfast that would taste great without too much work. I decided to keep it as simple as possible with a savory breakfast scramble with lots of yummy add-ins, grainy toast with jam and butter and a big bowl of fruit on the side.

The scramble was so easy; it took less than 20 minutes to both prep and cook and tasted absolutely delicious. The combo of flavors was delicious and totally hit the hot, cheesy, salty and filling targets without grease or a ton of fat.

Here's the simple recipe for the next time you need to feed a family or group of friends on a weekend morning.

Turkey Bacon and Avocado Scramble - Makes 4-5 big servings
-3 Eggs, 5 egg whites
-5 pieces turkey bacon chopped up (I get the natural nitrate-free kind from T Joes or Whole Foods)
-1/3 cup finely chopped chives
-3/4 cup shredded low-fat cheddar cheese (I used goat cheddar)
-Plenty of salt and pepper
-2 Avocados chopped up
-Cooking spray

-Put a large non-stick pan over medium high heat and spray with cooking spray
-Put the turkey bacon on and let cook for a few minutes.
-Break the egg whites and eggs into a bowl and add a tablespoon of water. Beat them up well and pour them into the pan with the bacon.
-Turn the heat down to medium low and spray again with pam
-Slowly cook the eggs and bacon - pushing them around with a rubber or wooden spatula from time to time to scramble them up. Add the chives about a minute after the egg (sprinkle chives throughout the pan.)
-Sprinkle salt and pepper over the eggs.
-Before the eggs are fully cooked add in the cheese and mix up with the scrambled eggs.
-When the eggs looked cooked through and the cheese is all melted turn the heat off and mix in the avocado.
-Serve and enjoy!
