Easy Spicy Tomato Soup


Nothing satisfies on a cold day quite like tomato soup and grilled cheese. This rainy week finished up with a sunny Sunday and we had a beautiful but chilly afternoon. The sun was shining but the wind was still whipping through San Francisco and all I wanted to eat was soup. I pulled together this very simple but tasty tomato soup with some cans of fire roasted tomatoes we had in the cabinet and made it into a meal with some cheese quesadillas. Easy peasy - delicious and satisfying dinner.

This tomato soup was simple but had a little heat and smokiness from the seasoning and green chillies. It's not quite enough to serve by itself but with tortillas and shredded cheese or alongside a grilled cheese or quesadillas it is perfect.

Easy and Spicy Tomato Soup
Ingredients:
1 (15 oz) can diced tomatoes
1 (15 oz) can roasted tomatoes with green chillies
2 tsps taco seasoning
1 1/2 tsp salt
1/2 tsp garlic powder
2 cups chicken broth
1/2 onion chopped

Put all ingredients in slow cooker and let cook for 6 hours on low.
Blend in cuisinart until pureed and smooth.
Serve with cilantro and a cheese quesadilla or grilled cheese.

  1. what if i don't have a slow cooker? what do i do?

  2. No problem without a slow cooker! Just saute the onions first so that they are cooked and soft and then mix in all the other ingredients in a big pot and let simmer on medium low for like 30-40 minutes, stirring occasionally.
