Breakfast for Dinner - Healthy French Toast

I love to cook but more often than I care to admit nothing sounds better for dinner than a giant bowl of cereal. After two days spent in the sun, Sunday was definitely one of those nights. Somehow I managed to overcome my cereal laziness and settle for a slightly more interesting breakfast for dinner, french toast!

I made a yummy and healthy french toast with some sauteed blueberries and bananas and it totally hit the spot. I can hardly call this a recipe it's so easy but in case you're bored with cereal for dinner, try this...

Healthy French Toast - Makes 1 big serving (just double for two people)

2 1/2 pieces whole wheat bread
1 egg
2/3 cup Fat Free Milk (I used vanilla almond milk for a little flavor)
1 1/2 tsp pumpkin pie spice (can sub with cinnamon)

Topping ideas:
Bananas and berries - saute in a pan
OR Maple Syrup of course

-Beat egg with milk and spice well in a bowl.
-Lay wheat bread in a tray or baking pan and pour egg/milk mixture on top of bread slices so they are totally soaking in it.
-Let this sit so the bread can soak up the mixture for 35 minutes up to 2 hours (this is key.)
-Put a non stick pan over medium high heat and spray with cooking spray. Fry the milk/egg soaked bread on each side for a couple minutes until golden brown.
-Saute the bananas and berries in a separate pan or on the side of the pan and serve on top of your french toast.
-Sprinkle with a little extra cinnamon and enjoy!
