Healthy Fiber One Pancake


When I was staying at my mom's apartment in New York I was cruising through her pantry at breakfast time and found some Fiber One cereal. I decided to try my usual healthy breakfast pancake with fiber one instead of oat flour and it worked out great... now I'm hooked! Here's the easy recipe:

Healthy Fiber One Pancake for 1

Ingredients:
1 half cup General Mills Fiber One
1 tablespoon fat free greek yogurt
1 egg white
1/3 cup fat free milk (I used vanilla almond but any will do!)
1 banana - sliced up.

-Chop up the fiber one until it is almost flour like in a cuisinart or put it in a plastic baggy and step on it a bunch (yup, done it.)
-Mix fiber one and everything else except for the banana. You should get a bowl of mush.
-Put a non-stick pan over medium high heat and spray with cooking spray.
-Spoon the fiber one mush onto the pan and spread out by gently pushing on it with a spoon until it is round and pancake sized.
-Press the banana slices into your pancake.
-Cook for a few minutes and flip. It should be golden brown.Saute leftover banana slices on the side of the pan.
-Eat and enjoy your balanced breakfast :)
