Spicy Asian Style Ground Turkey with Cabbage

Ok so this dish may not have the sexiest name or make the prettiest picture - but it had a lot of flavor, it was easy and healthy so I had to share it.

I love ground turkey.  It is lean but filling, you can keep it in the freezer and it takes on the flavor of whatever sauce you cook it in. We use it for burgers, tacos, shepard's pie and everything else I can think of so why not an asian stir fry? This dish was great alone and even better on top of some white rice.

Here's the simple recipe:

Spicy Asian Style Ground Turkey with Cabbage
-inspired by one of my favorite spicy tofu recipes from Molly Katzen's "The Vegetable Dishes I can't Live Without.

-7 oz lean ground turkey (I like the kind that is 93% Fat free.)
-3 1/2 cups chopped or shredded green cabbage
-3/4 cup chopped onion
-1/2 cup chopped green beans
-1/2 cup sliced shittake mushrooms
-1 1/2 teaspoons red pepper flakes
-2 1/2 tablespoons low-sodium soy sauce plus extra for seasoning
-1 tablespoon dark sesame oil
-1 tablespoon apple cider vinegar

- Put a large pan over medium high heat and spray with cooking spray
- Saute shiitake mushrooms with red pepper flakes until they are starting to go limp about 5 minutes
-Push them to the side of the pan so they are not over the direct heat and add in the cabbage and green beans and sprinkle lightly with a little salt.
-Cook the cabbage for about 15 minutes, covering and stiring occasionally, it's ok if some pieces get a little brown on the edges. It should start to shrink down considerably and soften up
-Add in the ground turkey and break it up into little chunks with your spoon and mix everything together including the sidelined mushrooms. Season with a little soy sauce and stir fry until the meat is no longer pink.
-Mix up the soy sauce, sesame oil and cider vinegar in a little bowl and pour over the mixture.
-Let everything cook in the sauce a couple minutes before taking out and pouring it all into a bowl, cover so it stays warm.
-Turn the same pan up to high heat and spray with pam. Pour in the onion and flash "fry" for a minute or two until the pieces are soft and starting to brown on the edges.
- Mix the onions in with cabbage and meat mixture and serve with a little extra soy sauce for seasoning.
