Healthy Baked Chicken Parm

Ever since I started making my baked buffalo chicken tenders I've been looking for another reason to coat chicken in rice krispies. The buffalo chicken is excellent but one can only ingest so much hot sauce per week.  So tonight I did the same baked rice krispie chicken but with an italian spin --- like chicken parm! This was good, really good. As an Italian-American cuisine lover I've eaten a lot of unhealthy chicken parm that still manages to taste crappy. This was very healthy AND tasty.  Winner winner chicken dinner. 

Try it out!

Healthy Baked Chicken Parm
2 large boneless skinless chicken breasts cut into about 3 pieces each
2/3 cup marinara sauce

1 cup rice krispy cereal
4 tablespoons grated parmesan cheese
2 Dashes cayenne pepper powder
2 dashes garlic powder
2 teaspoons italian seasoning
Salt and Pepper

-Preheat the oven to 400 degrees
-Spray a baking sheet with cooking spray
-Cut the chicken breasts into thirds and season well with salt and pepper
-Put the rice krispies, cayenne, garlic and italian seasoning in a zip lock bag and crush up with your hands until the cereal is like breadcrumbs.
-Spray the chicken with cooking spray and toss in the bag until well coated in the cereal
-Put the chicken in the oven and bake for 10 minutes
-Take out of the oven and spoon the marinara sauce over the chicken until it is pretty much covered
-Sprinkle the cheese on top
-Put back in the oven for 1-2 minutes
-Serve and enjoy. I enjoyed mine with some roast green beans on the side - yum!
