Healthy Buffalo Chicken Tenders


Do you lovvvvve buffalo sauce? Try these!  I made these baked buffalo nuggets on Monday night and they definitely earned their spot in the regular lazy dinner weeknight rotation.  Try them in a salad or on their own. I dipped them in a yummy ranch sauce I made from fat free greek yogurt and a Hidden Valley ranch seasoning packet... yum!

Buffalo Chicken Tenders

Ingredients: Serves 2
2 boneless and skinless chicken breasts
2 teaspoons italian seasoning
1 teaspoon cayenne powder
Salt and pepper
2/3 cup rice krispies
Pam cooking Spray
Frank's Red Hot Sauce

-Preheat oven to 400 degrees
-Cut chicken up into nugget sized pieces and season with salt and pepper
-Put seasonings and rice krispies in a ziplock bag and crush up well with your hands or fists
-Spray chicken with pam and toss in bag, toss around until chicken is well coated.
-Spray baking sheet and put chicken on it.
-Bake chicken at 400 degrees for 10 minutes
-Take chicken out and pour the red hot all over the chicken, put it back into the oven for 1 more minute and serve.
