Simple But Filling Tomato and Avocado Salad



I have a hard time eating a dinner without vegetables. Usually I just need a little roasted veggies or greens on the side but when we're eating something lean like fish it's nice to have a salad with a little oomph. Avocadoes are a perfect way to add a little heft into a salad without making it super unhealthy. Next time you're grilling and want a yummy more filling salad try this SUPER easy blend.

Avocado and Tomato Salad - makes 3-4 servings small servings
2 chopped fresh large tomatoes (heirloom if you can swing it!)
1 bunch chopped fresh basil
1 ripe avocado chopped up
Salt and Pepper

-Combine tomatoes, basil and avocado in a bowl and sprinkle with salt and pepper and then toss in the below dressing.

Dressing: Mix up the below and toss on the salad (add more to taste)
2 teaspoons olive oil
2 1/2 tablespoons balsamic vinegar
1 tiny sprinkle garlic powder
1 teaspoon italian seasoning
