Healthy Vegetarian Calzone

Bad Picture, Good Calzone!!


Hot bready stuff + cheese + sauce = delicioso. Now make the bready stuff whole wheat, the cheese a sprinkle of parmesan, the sauce marinara and throw in some veggies and you have a delicious AND healthy dinner.

Trader Joe's or Whole Foods' pre-made  pizza dough is the best. Just cut it into four pieces and roll each one out to make dinner size calzones.  I like to assemble them ahead of time if I have some free time on a Sunday so that when I get home from work on Monday you just stick it in the oven and bake for 12 minutes and voila - hot and tasty dinner.  I  filled these ones with sauteed cabbage and onions, spices, spicy marinara sauce some vegan faux ground meat and a sprinkle of parmesan. They were delish!

Healthy Vegetarian Calzones

Ingredients for 2 calzones:
-1/2 package pre-made pizza dough - Cut the whole ball into 4 pieces and just use two of them for your two calzones.
-1/2 cup marinara sauce  or spicy marinara sauce
-1/2 cup Lightlife faux Ground meat or sub in ground turkey or chicken
-1/2 cup chopped onion
-1 cup chopped green cabbage
-Salt and pepper
-Italian seasoning
-Garlic powder
-4 tablespoons grated parmesan cheese

-Preheat oven to 450
-Put a large pan over medium high heat and spray with cooking spray.
-Toss in cabbage and onion and season well with salt and pepper.
-Saute for about 10 minutes or more until both the onions and cabbage are soft.
-Toss in the faux ground meat (or real meat) and saute until warm (or cooked in the case of real meat.)
-Turn the heat off and add in the spicy marinara sauce, a spoonful of italian seasoning and a sprinkle of garlic powder. Mix everything together.
-Roll out your dough until they are round and flat. Sprinkle a little flour on the counter and your rolling pin so it doesn't stick.
-Put a big scoop (maybe 3/4 cup?) of the sauteed filling and sauce onto the middle of your rolled out dough and top with 2 heaping tablespoons of parmesan cheese. Fold over the sides of the dough and crimp so that it is a sealed calzone.
-Do the same thing with the other piece of dough to make a second calzone.
-Spray a baking sheet with cooking spray and carefully place the calzones on it. Bake for about 10-12 minutes or until crust is totally cooked through.
-Eat and serve with a little extra marinara sauce on the side to dip!
