Pureeed Detox Veggie Soup
Happy Tuesday after MLK jr weekend people!
My perfect 3 day weekend wrapped up with a giant kick to the sinuses and I came in to work today ridiculously congested. While nose spray and Dayquil helped me tough it out I felt pretty crappy by the end of the day and the only thing that sounded remotely interesting for dinner was soup. This helpful mush turned out very nourishing and satisfied my need for a warm spoon-fed healthy meal. It's a great recipe for when you need some veggies or want to detox a bit from junkfood and I used frozen veggies to cut back on roasting time and chopping.

Pureed Veggie Detox Soup
-1 bag frozen veggie mix - Cauliflower, carrots and broccoli
-1 half cup frozen butternut squash (available at Whole foods but you can probably sub for extra carrots)
-1 1/3 cups chicken broth
-1/2 cup unsweetened almond milk
-1 teaspoon garlic powder
-2 teaspoons italian seasoning
a tiny sprinkle of cayenne pepper
-Lots of salt and a little pepper to taste
-Roast veggies with a little cooking spray at 450 degrees for about 15-20 mins or until they are soft and cooked through
-Puree veggies in blender with almond milk, chicken broth and seasonings
-Heat up over the stove or in the microwave and enjoy. Add more salt to taste!!!
