Super Easy Healthy Snack: Apple Chips
I honestly can't remember where I found this recipe but I googled apple chips to find it on some website and I think it originally came from Weight Watchers. Don't let that scare you off --- these are so yummy!!!
If you have a mandolin slicer this recipe takes about 10 minutes to prep and you just let it go in the oven for 2 hours before you have a delicious and crispy healthy snack. We put a big bowl out at our Christmas party as a healthy alternative and they were a hit.
Here's the recipe
-Preheat oven to 200 degrees
-Slice several apples (more the merrier) thinly with a mandolin slicer
-Mix 1 tablespoon of sugar (or Splenda but sugar tastes better) with 2 tablespoons of cinnamon in a big ziplock or tupperware and toss in the apple slices and seal/cover, shake around till apple slices are dusted with a bit of the cinnamon/sugar mixture.
-Spray a baking pan or 2 with Pam and lay out the apple slices until they cover the pan (don't overlap them too much.)
-Bake for a full 2 hours and then take them off the pan and put them on a cooling rack.
-The should be nice and crisp like chips! if they dont feel firm when you take them out after 2 hours let them cook a little longer.
