Fat Free Mashed Cauliflower



Cauliflower is one of my favorite fake out ingredients for a good side dish that doesn't include starchy carbs. You can shred it up to make faux rice and recently I've blended it to make mashed cauliflower without all the butter and cream.

This is a yummy side that goes great with any kind of sauce-y meat or stir fry. We ate ours with some spicey asian style ground meat. It's not as deliciously creamy as real mashed potatoes but it's a super satisfying way to sneak a big dose of veggies into your dinner!

Mashed Cauliflower
Ingredients
-1 head of caulflower cut up into small florets
-1 tsp garlic powder
-1 cup chicken broth or veggie broth
-Salt and Pepper
-1/2 tsp italian seasoning

-Blend cauliflower and chicken broth in cuisinart until it is total mush
-Spray a large pan with Pam and put on medium heat, poor in the cauliflower mush.
-Add the garlic powder and italian seasoning and a little salt and pepper
-Saute for about 15-20 minutes until it is thick and soft and not watery --- should get to the texture of mashed potatoes. Add plenty more salt and seasonings to taste and serve!
